A great easy throw together pancake recipe (dairy free/gluten free)

Peasy Pancakes (dairy free/gluten free)


Put all the following ingredients into food processor and blitz:

  • 1 tin of coconut milk (400ml)
  • 100g gluten free flour
  • 1 egg
  • 40g caster sugar (optional as coconut milk naturally sweet)


Heat Coconut oil or butter in pan - cook and flip golden each side

 Toppings - Greek yogurt and berries, lime/lemon juice......or savoury....
